Welsh Light Cakes or Pancakes Shrove Tuesday 16th February – Pancake Day Shrove comes from shrive which means to confess sins. Shrove Tuesday is the last day before Lent in the Christian Calendar - Christians observe Lent as a time of abstinence; it commemorates the 40 days and forty nights that Jesus spent in the wilderness. Years ago, Shrove Tuesday was the day that milk, eggs and butter were not used again until Easter. To use up any eggs milk and butter pancakes were made

Method:

Make into a batter, beating until bubbly, with a wooden spoon.
Bake on a hot griddle or a frying pan, using a little fat.
Serve hot with mixed dried fruit or raisins, sprinkle with lemon juice.

You could also add either honey, sugar, cream or a caramel sauce - naughty but delicious!

Ingredients:

6 tablespoons of flour
2 tablespoons of sugar
2 or 3 tablespoons of sour cream if available
Pinch of salt
½ teaspoon bicarbonate of soda and 1 tablespoon of Cream of tartar, dissolved in water
2 or 3 eggs
Buttermilk or milk to mix
